Background
In recent years, egg production has been in the spotlight for animal welfare issues. An overwhelmingly large percent of global laying hens are still caged despite the growing number of ‘free-range’ farms. Egg production has increased in recent decades, and has reached a volume of 68 million tons worldwide. The main reason is that chicken eggs are not only a valuable source of protein but also inexpensive. In the kitchen, eggs are versatile and quick to cook. They can thicken, bind, leaven, glaze or garnish. Eggs can be center of the plate or they can blend into the background. They are used in sweet and savory dishes; and are eaten across cultures through the day – breakfast, lunch or dinner.
Chicken and the Egg
We use sterilized egg shells to make an interactive art installation. In each of these, we place curated ice breaker questions (for networking) or thematic prompts. Guests smash the egg shells using their bare hands (or supplied tools) to access the questions. A sit-down meal supplements the entire conversation. The menu is designed using (you guessed it) – EGGS!
