Meet Jashan
Our Founder, Jashan Sippy, is a green building certified architect specialised in the design of spaces of food. His dissertation titled Gastronomy & Architecture: Multisensory Experiences formed the basis of the unconventional work we do at Sugar and Space.
Jashan pursued an M.Sc. in International Business from the HULT International Business School specialising in entrepreneurship. He is certified by the European Bartender School, Kyiv International Culinary Academy and has also been the food and space correspondent for The Dutch Institute of Food & Design.
In August 2020, he co-founded Food Design Nation, a digital platform which connects global food creatives to collaboratively design better futures of food. He is also the Director at the Online School of Food Design.

Eating Without Eyes: Multisensory Blindfolded Experience
A one-of-its-kind food experience designed to engage your senses. What sensations are heightened when you can’t use your vision to judge what’s on your plate?
The Blindfolded Dining Experience: Guest make their way through ten courses of varying smells, tastes, and textures, all while completely blindfolded. You will have ample time in between courses to process your experience and have some lively discussion with your group. At the end of the session, you will get to take home photos of your most memorable moments.
Nectar: Sustainable Performance Dessert
Embark upon a delicious and fantastical journey as you take on the role of bees in pollination in their quest to keep our ecosystems flourishing.

Reusable Beeswax Wraps: We've partnered with Mumbai-based Crystazine Embroidery Studio to create a limited range of sustainable beeswax food wraps. Made of upcycled fabric, each wrap is unique, reusable and helps you get one step closer on your journey of conscious living.
Earthen: Immersive Outdoor Experience
For centuries, indigenous people have relied on the basic elements; earth, fire, water and air; to provide themselves with nutrition, shelter and clothing. Depending on the available local resources, weather conditions and culture, earthen food varies from one tribe to another. Immerse yourself in nature and become one with the land through Earthen.
The Immersive Experience: Guests rely on all their bodily senses; sight, sound, touch, smell and teste; to fully immerse themselves in the great outdoors, exploring indigenous global cooking techniques and unravelling lip smacking and unusual flavours. You will build your own earth ovens, forage for fresh produce and use slow cooking, grilling, and steaming techniques to celebrate raw food while learning the ways of the land.
Storytelling through Choux: Mixed-Media Creativity Workshop
Our minds typically rely on a change in scenery and sensory stimulation to break through creative blocks in order to find inspiration from new and varied sources. Choux pastry is an unassuming tool that has the power to keep that creator’s block at bay (not to mention it also gets your appetite rolling).
Mixed-media creativity workshop: This mixed-media workshop encourages you to find inspiration from the most unexpected places and to express yourself in a modality of your choice – writing, poetry, video, photography, painting, drawing, 3D modelling, dancing or beyond! You will make your way through a creative and reflective exercise, personalized to you, but with choux!
Share your Choux Story: Get in on the fun! Share the outcome of your creative storytelling journey through choux pastry. Enjoy a collection of stories created and narrated by participants during our previous Storytelling through Choux workshops.
Death Over Dinner: Uplifting Interactive Adventure
How we want to die – represents the most important and costly conversation most of us aren’t having. Embark upon an uplifting interactive adventure that transforms this seemingly difficult conversation into one of deep engagement, insight and empowerment.
The Facilitated Experience: Guests make their way through a curated meal that represents their 'Last Supper'. Through food and guided discussion, you will dive into the depths of what most of us push under the carpet - death. You will share your experiences, views and opinions, in a safe and friendly environment.
Food - Multisensory Experiences: Interactive Digital Workshop
Each of our bodily senses plays an important role in the way we perceive everyday food. But how aware of this are we? Could this awareness lead to innovative and unforgettable offerings in the eating place? By cutting off each sense and pairing it with an item of everyday food, Food: Multisensory Experiences aims to demonstrate this in an immersive, unforgettable way.
Eat//Sense Dining Experience: Guests make their way through five courses, each designed to engage different senses. A carefully choreographed combination of flavourful ingredients and sensory experience, Eat//Sense will transform the way you perceive food on your plate.
The Interactive Workshop: We carefully pair props and items of food and drink; to break down and demonstrate how ‘off-plate’ elements (including smell, sound, texture and other senses) play a role in the perception of flavour. This is an interactive, informative workshop supported by real examples, geared towards creatives working with food. Backed by the new-age research in the growing field of Gatsrophysics, a refined fine-dine experience is the practical application of this hands-on learning.

Gastronomy and Architecture: Multisensory Experiences
Gastronomy and architecture as the sublimation of nutrition and shelter are creative solutions that have the ability to provide pleasure and therefore sustain and enrich our everyday lives. Several similarities exist between the two artistic disciplines as professions and processes of design. This research explores a selection of connections between the two fields as a means of discovering what might be learned in the field of architecture from gastronomic pursuits in a light-hearted and palatable manner.
Center for Artisanal Gastronomy: This award-winning presentation was created entirely out of cake, confectionary and edible material. The Center for Artisanal Gastronomy proposes built-for food structures using all natural materials including mycelium (mushroom) bricks, mastic waterproofing, Himalayan Pink Salt block seasoning and coconut cladding. Each building is carefully flavour-profiled to simulate a holistic experience based on the sensorial attributes of the proposed architectural space.
The Book: Unravel how quality of lighting, background sounds, colour, materials and ambient temperature, indoors in an elaborate dining room or out in the open, affect the perception of flavour, and the eating experience. Through first-hand and theoretical research, case studies and multisensory experiments, Gastronomy & Architecture: Multisensory Experiences unveils how the built environment that we interact with food in affects the way we perceive it.

Al Dente Wall
An interactive installation created using upcycled pasta. For our first Al Dente Wall (Mumbai, March 2019), we used 25 kilograms of boxed pasta (elbow macaroni) past its expiration date, which was sourced from local mom-and-pop shops. The ready-to-install handcrafted modular panels featured 28,800 pieces of waste macaroni spanning 18 feet long and 4 feet high. The installation is brought to life with simple and tasteful LED backlighting.
Your Al Dente Wall: Our Signature Al Dente Walls are not only interactive in person but also photogenic and make it to many visitors’ Instagram feeds. They are a remarkable way to engage with customers online and in person. They can be customized and delivered ready-for-installation. Treated with shellac for preservation and prolonged durability, we also provide maintenance packages.
Scratch 'n Sniff Panels
An interactive installation designed for multisensory engagement. Remember the scented pens you wrote with when you were young? Or the satisfactory pleasure of scratching off the silver from a lottery ticket? Our scratch and sniff wall panels are the perfect way to engage an audience, irrespective of their age.
Your Scratch 'n Sniff Wall: Walking into a patisserie, bakery, ice cream parlor or frozen yogurt store, a perfumery or a cosmetics and beauty store, our senses are switched on. Textures, colors, aromas – you just want to eat everything. Our panels are not only customizable, economical, fire resistant and organic but also quick to install. Imagine the delight on the faces of your consumers as they scratch, sniff and savor the flavors of your products!
Spirulina in Space
An interactive installation designed for interplanetary travel. Space travellers spend months confined in a single spacecraft. As a result, they face boredom, frustration and lose interest in essential activities such as eating. Interactive installations using spirulina capsules can be fitted into spacecrafts to provide edible entertainment for space travellers.

Meet Ishita
Ishita is the Creative Chef at Sugar and Space. She works closely with Jashan to bring his creative visions into edible form and leads the production for our events in Mumbai. We constantly innovate in the kitchen, reconsidering 'waste' and create whimsical outcomes including printable edible inks.

Mia is the Sustainability Advisor at Sugar and Space. Based in Oslo, Norway, Mia is a consultant of climate change and sustainability. Mia hosts talks and interactive Sugar and Space workshops globally.

Our 3D food printer makes us a mobile manufacturing unit. We transform food waste into edible inks and 3D print delicious, nutritious and stunning designer food – Edible Bytes. We host 3D food printing tasting and demonstrations, cater small-scale events and even create edible prototypes for private and corporate clients – whether you want to spoil a loved one, peak the interest of your child or wow your clients, this is for you!

I am a green building architect
specialized in the design of spaces of food. I presented a completely edible architectural walk through of my dissertation and research – Gastronomy & Architecture: Multisensory Experiences.
I’ve worked as an architect in the Bay Area after which I pursued an M.Sc. in International Business specializing in entrepreneurship. I gained tremendous managerial and customer service experience at Candytopia, a made-for-Instagram pop up art installation inspired by candy in San Francisco.
I am certified by the European Bartender School and Kiev International Culinary Academy, and have been the food and space correspondent for the Dutch Institute of Food and Design.
